Below, we asked Carrie to share two new takes on classic menu options that are easy to make with ingredients you might even already have at home–and taste delicious to please a crowd of hungry eaters. Cooking With Carrie: Easy Meal Ideas to Make At Home
For many of us, 2020 is the year we started using our kitchens to *actually* cook.
Which means at this point in the year, we're desperately in need of new recipe inspiration. But you're in luck: we turned to Carrie Nachmani, SN's resident chef and Arielle's mom, for a few words of kitchen-related wisdom and innovative meal ideas based on ingredients you already have in your pantry.
Carrie's Signature Pancakes
Ingredients:
1 cup of pancake mix
1/2 cup milk
1 egg
Nonstick spray
Any toppings you'd like! We used chocolate chips
Directions:
Heat up the griddle
Test to see if the griddle is ready by adding a drop of water and seeing if it "dances"–if it does, the griddle is ready to go!
Mix the pancake mix with the milk and egg
Spray the griddle
Pour the pancakes
As soon as they start bubbling, add chocolate chips
They'll cook quickly so get ready to turn them once they're bubbling!
Carrie's Simple (And Delicious) Rice With Veggies
Ingredients:
1 cup of white rice
1 pound of fresh peas
Olive oil to coat pan
Directions:
Wash and strain 1 cup of rice
Heat olive oil in a saute pan; boil 2 cups of water in a separate saucepan
Add 1 cup of white rice once the saute pan is warm
Once the rice starts to turn a little brown, add 2 cups of boiling water from the saucepan to the saute pan
Cover and let it simmer for 10 minutes
Steam 1 pound of fresh peas for 2 minutes
When the rice is almost ready, mix in the peas
Add salt and pepper to taste
