Creamy Avocado Pasta
Anna Engelschall’s creamy avocado pasta is the perfect light choice for a hot summer night. The recipe serves two, so you can impress your bestie or date with this delicious dish.
Ingredients (for two servings):
1 avocado
2 garlic cloves
1 lemon (juice)
Salt and pepper
20g parmesan cheese
5-6 fresh basil leaves
100 ml pasta water
5g olive oil
Red pepper flakes
Directions:
Add pasta to boiling salt water and cook until tender. Strain pasta and put set aside the pasta water for the sauce. Blend together avocado, garlic cloves, lemon juice, grated parmesan cheese, basil leaves, pasta water, and olive oil. Add to pasta along with red pepper flakes for seasoning.
