National Avocado Day — Team SN’s Favorite Recipes

The end of July brings the beginning of a new month, the closing chapter of summer, and most importantly, National Avocado Day. Whether you put this versatile food on your toast, use it as the base for a pasta sauce, or even as an ingredient in your dessert, there is truly nothing you can’t do with avocados. Creamy Avocado Pasta

Anna Engelschall’s creamy avocado pasta is the perfect light choice for a hot summer night. The recipe serves two, so you can impress your bestie or date with this delicious dish. 

Ingredients (for two servings):  

  • 1 avocado 

  • 2 garlic cloves

  • 1 lemon (juice)

  • Salt and pepper

  • 20g parmesan cheese

  • 5-6 fresh basil leaves

  • 100 ml pasta water

  • 5g olive oil 

  • Red pepper flakes 


Add pasta to boiling salt water and cook until tender. Strain pasta and put set aside the pasta water for the sauce. Blend together avocado, garlic cloves, lemon juice, grated parmesan cheese, basil leaves, pasta water, and olive oil. Add to pasta along with red pepper flakes for seasoning.

Avocado Egg Rolls

Serving as a dupe recipe for Cheesecake Factory’s mouth-watering avocado egg rolls, Alyssa Alonso blessed her 963.6 TikTok followers with a recipe that’s easy to recreate and tastes just as good. 


  • 5 ripe avocados 

  •  ½ of a lime (juice)

  • 3 ½ oz sun-dried tomatoes 

  • ½ cup red onion

  • ½ cup cilantro 

  • Salt 

  • Pepper

  • Packaged egg roll wraps


Chop 5 avocados into cubes then add to a large bowl along with lime juice and sun-dried tomatoes. Finely dice red onion, then add to the bowl along with chopped cilantro and salt and pepper to taste. Once you’ve mixed all the ingredients together, take a spoonful of the avocado mash, and place it in the lower third region of the egg roll wrap. Roll egg roll wrap according to instructions on the package. Finally, fry avocado egg rolls on medium heat until golden brown, then let cool.

Avocado Fries

Searching for a healthier alternative to a side of fries? Look no further. Valentina Mussi has got you covered with her delicious and simple recipe for avocado fries… yum! 


  • 1-2 avocados (under-ripe)

  • 1 lime 

  • Bread crumbs

  • Coconut oil spray 


Slice avocados into thin strips, coat with lime juice, and cover in bread crumbs. Place tin foil in the basket of an air fryer, lightly spray with coconut oil spray, and fry avocados at 370 degrees F for 5 minutes, flip, and cook for 5 more minutes. Season with a dash of salt (or some Trader Joe’s chili lime seasoning per Valentina Mussi’s recommendation), and enjoy.

Avocado Brownies

While adding avocados into your brownie recipe may seem a little strange, trust us and Jazmin Tyler’s 477.1k followers on this one. Not only do avocados increase the overall health benefits of a recipe, in this case, but their creamy texture also makes the brownies extra moist and rich in flavor. Give it a try!


  • 1 avocado 

  • ⅓ cup cacao powder

  • ⅔ cup maple syrup 

  • ¼ cup whole wheat (or gluten-free) flour 

  • 2 eggs

  • ¼ cup coconut oil 

  • 1 tbsp vanilla 

  • 1 tsp baking soda

  • ½ cup chocolate chips 

  • ½ cup walnuts (optional)


Add avocado, cacao powder, maple syrup, flour, eggs, coconut oil, vanilla, and baking soda to a  mixer and blend. Then, stir in chocolate chips and walnuts, pour into a pan, and bake for 30-45 (until brownies are cooked through) at 350 degrees F.

Hashbrown Avocado Toast

You’ve likely seen this viral recipe all over TikTok and Team SN can confirm that it’s worth the hype. Add your own twist to this beloved Trader Joe’s hack by adding hot sauce, spicy honey, lemon juice, or any topping you prefer for your avo-toast. 


  • 1 Trader Joe’s hashbrown

  • 1 avocado 

  • 1 egg

  • Salt and pepper


You know the drill by now for this viral recipe! Cook a hashbrown in the air fryer at 400 degrees F for 8-10 minutes, then add mashed avocado on top. Fry an egg over medium heat and add to hashbrown once cooked, season with a dash of salt and pepper, and enjoy!
