The Jennifer Aniston Salad
We’re willing to try anything Jennifer Aniston-related, and this salad is definitely worth the hype. Regardless of whether the “Friends” star actually ate this every day for 10 years on set, the salad that @the_bottomlesspit recreated has over 10.4 million views on TikTok and hundreds of glowing reviews in the comments. Ingredients:
15 oz. can of chickpeas
1 large diced cucumber
¼ cup parsley
10-15 minced mint leaves
1/2 cup of crumbled feta cheese
¼ cup pickled red onion
½ cup pistachios (crushed)
1 cup quinoa
Dash of salt
Dash of pepper
Splash of olive oil
Splash of balsamic vinegar
Directions:
Start off by draining and rinsing your chickpeas. Next, add chickpeas to a large bowl along with cucumber and red onion. Then, add parsley and mint leaves, as well as feta cheese, and crushed pistachios. Cook quinoa to your liking and mix with other ingredients. Add a dash of salt and pepper, a splash of olive oil, and balsamic vinegar. Mix and enjoy!
