The Summer Salads We're Obsessing Over

The Jennifer Aniston Salad 

We’re willing to try anything Jennifer Aniston-related, and this salad is definitely worth the hype. Regardless of whether the “Friends” star actually ate this every day for 10 years on set, the salad that @the_bottomlesspit recreated has over 10.4 million views on TikTok and hundreds of glowing reviews in the comments. We know you’ll become just as obsessed with this salad as we are! 

Ingredients: 

  • 15 oz. can of chickpeas 

  • 1 large diced cucumber

  • ¼ cup parsley

  • 10-15 minced mint leaves

  • 1/2 cup of crumbled feta cheese

  • ¼ cup pickled red onion 

  • ½ cup pistachios (crushed) 

  • 1 cup quinoa 

  • Dash of salt 

  • Dash of pepper 

  • Splash of olive oil 

  • Splash of balsamic vinegar 

Directions: 

Start off by draining and rinsing your chickpeas. Next, add chickpeas to a large bowl along with cucumber and red onion. Then, add parsley and mint leaves, as well as feta cheese, and crushed pistachios. Cook quinoa to your liking and mix with other ingredients. Add a dash of salt and pepper, a splash of olive oil, and balsamic vinegar. Mix and enjoy!

Emma Chamberlain's Cava Salad

If you loved Emma Chamberlain’s collaboration with Cava as much as we did, then you’re in luck. According to @thesaladlab, ”Emma’s Fire Bowl” is super simple to recreate in your own kitchen. Whether you’re working from home or heading off to the beach, this is the perfect summer salad for whatever your day-to-day schedule may include. 

Ingredients: 

Salad

  • 2 cups lettuce 

  • 1 cup falafel 

  • ½ cup pickled onion 

  • ½ cup diced persian cucumber 

  • ¾ cup crumbled feta cheese

  • ½ cup diced cherry tomatoes 

  • ½ cup chopped avocado 

  • Spicy hummus of your choice

  • Kalamata olives 

Dressing

  • ½ cup extra virgin olive oil 

  • ½ cup chopped cilantro 

  • ½ cup chopped parsley 

  • 4 or 5 deveined and seeded jalapeños 

  • 5 or 6 cloves of garlic

  • 1 teaspoon cumin 

  • 1 teaspoon coriander 

  • ½ teaspoon cardamom 

  • Dash of sea salt 

Directions:

To make the dressing, simply add extra virgin olive oil, chopped cilantro, chopped parsley, jalapeños, garlic cloves, cumin, coriander, cardamon, and sea salt to a bowl and mix. Next wash lettuce and add to a large bowl along with the falafel, pickled onion, persian cucumber, feta cheese, cherry tomatoes, avocado, and kalamata olives. Add the spicy hummus of your choice and enjoy.

Healthy Girl Summer Salad 

According to Team SN, you can’t have the perfect summer salad without strawberries. While you may be skeptical about adding berries into the mix along with feta cheese and veggies, trust us,  @healthygirlkitchen, and her 1.9 million TikTok followers on this one, it’s delicious.

Ingredients:

Salad

  • 2 cups arugula 

  • 2 cups spinach 

  • 1 cup diced cucumber 

  • 2 cups sliced strawberries 

  • 1 cup chopped red onion 

  • 2 cups cooked farro 

  • 1 cup chopped avocado 

  • 1 cup crumbled feta (or vegan feta) 

Poppy seed dressing

  • ¼ cup white wine vinegar

  • ½ cup olive oil 

  • 2 tbsp vegan yogurt 

  • 2 tbsp maple syrup 

  • 2 tsp grated shallot 

  • 1 tsp dijon mustard 

  • ¼ tsp salt 

  • 1.5 tbsp poppy seeds 

Directions:

To create the dressing, add white wine vinegar, olive oil, vegan yogurt, maple syrup, shallot, dijon mustard, salt, and poppy seeds to a small bowl and stir. Next, to make the salad, start by rinsing and draining the farro, then add to a boiling pot of water for approximately 15-20 minutes while stirring occasionally. Once farro is chewy and tender, drain and add to a large bowl along with arugula, spinach, cucumber, strawberries, red onion, avocado, and crumbled feta. Toss with dressing and enjoy!

Hot Girl Summer Salad

What would hot girl summer be without a hot girl summer salad to go along with it? If you’re looking for a simple way to incorporate more veggies into your diet, @herdresscode tells us that this salad is an easy (and delicious) way to do so. The viral salad recipe has 1.3 million likes on TikTok and is definitely Team SN approved!

Ingredients: 

  • 1 diced bell pepper (any color) 

  • 2 cucumbers peeled and diced 

  • ½ cup chopped red onion

  • ½ cup sliced pepperoncini peppers

  • 3 hard boiled eggs peeled and chopped

  • ¼ cup roasted sunflower seeds

  • ½ tsp garlic powder 

  • ½ tsp paprika 

  • ¼ tsp ground pepper

  • ¾ cups zesty Italian dressing of your choice

Directions: 

Add bell pepper, cucumbers, red onion, pepperoncini peppers, hard boiled eggs, roasted sunflower seeds, garlic powder, paprika, and ground pepper to a large bowl. Toss with your choice of zesty Italian dressing (or oil and vinegar as @herdresscode mentions in her Tik Tok), and serve!
